Strawberry Banana Bread

What do you do when you see the banana starting to ripen and you don't want them to go to waste? You make strawberry banana bread and top it with a pink cream cheese frosting. So moist and light with a hint of sweetness. Great has an early morning treat with a cup of java, a mid-day snack with a class of milk, or a delightful evening indulgent with a glass of white wine. Whatever you decide this recipe wont disappoint.


Banana nut bread is scrumptious by itself but changing up the game with strawberries and golden raisins just sends the tastebuds out of this world. You should also try some of my other recipes that are just as moist and delicious like zucchini bread, lemon pound cake, blueberry lemon pound cake.

Banana Bread has it's own national day. February 23rd is national Banana bread day, since this is strawberry banana bread I think this would count too. Just like the housewives doing the Great Depression I did not want to throw away food so I decide to bake the Strawberry banana bread.



Quick Storage Tips


The key to keeping strawberry banana bread fresh as the day you baked it is to wrap it in plastic wrap and store in an airtight storage bag on your counter top. Make sure you keep as much excess air out of the storage bag when you open it to keep the bread moist.


If you think it will last long enough you can store the strawberry banana bread in the fridge up to a week. The cold from the refrigerator may dry the bread out so be careful to wrap in tight as you open and close the bread.


Strawberry banana banana bread freezes extremely well. Stored properly using a freezer bag it should keep up to three months. Make sure you thaw it out for at least 24 hours.


Ingredients Strawberry Banana Bread

3 ripen bananas

2 cups strawberries (fresh or frozen)

1/3 cup unsalted butter

1/2 tsp baking soda

1/8 tsp salt

1 tsp cinnamon

2/3 cup of granulated sugar

2 eggs

1/2 tsp vanilla extract

1 1/2 cup all purpose flour

Glaze

  • 1 cup of powdered sugar (Confectioners sugar)

  • 4 oz cream cheese

  • 3 Tbsp half & half (or milk)

  • 2 drops red food coloring

  • 1/4 tsp vanilla


Let's Cook!


  • Preheat the oven to 350° F (175° C) and butter the loaf pan.

  • Ripen bananas are the best for this dish. To ripen bananas in the oven, bake in the oven at 350° F for 30-40 minutes or until blacked and moist. Mash with a potato masher or fork until smooth. You can use ripen banana that are brown and yellow

  • Add strawberries to a medium sauce pan over medium to high heat.

  • Add granulated white sugar stirring frequently until sugar dissolve and blueberries begin to thicken.

  • Add cinnamon and vanilla extract to the strawberries. Allow the strawberry mixture to cook down. Reduce the heat and set it to the side.

  • Whisk together 2 eggs, sugar and melted butter. Blend the mixture well.


  • Add the mashed banana and the strawberry mixture to the wet ingredients. Whisk until all ingredients are blended.



  • In a separate mixing bowl add flour, baking soda, and salt. Whisk together to ensure the ingredients are blended throughout the flour.

  • Add the dry ingredients to the wet ingredients.

  • Optional - Add in golden raisins for a hint of sweetness in every bite.

  • Line the loaf pan with parchment paper. Pour batter into butter loaf pan. Bake for 60-65 minutes in the oven. Insert a toothpick in the center, if it comes out clean your bread is fully baked. Wait five minutes and remove from loaf pan to stop the bread from continue to brown from the hot pan.


  • Allow the strawberry banana bread to cool before adding frosting.

  • In a small bowl add the powdered sugar, cream cheese, milk, red food coloring, and vanilla. Add milk to get the right consistency.

  • Whisk until smooth. Drizzle over the strawberry banana bread. Slice and serve.
