Banana Nut Bread

This is a simple and easy recipe that is sooooooo good, moist, and delicious. Banana bread is my go-to snack when I need to satisfy that sweet tooth craving. It's my quick breakfast in the morning or late at night with a hot cup of coffee or tea. It stays moist for days. You can turn this recipe into Banana Nut Muffins. Adding fruit to recipes can make food fun. Lemon pound cake, Blueberry Lemon pound cake, and so many more.


For this recipe you will need a loaf pan. I recommend the Cuisinart brand, it's durable, and allows even heating when cooking. It has a non-stick interior and exterior that helps with easy cleanup.

Did You Know! there is a national banana bread day which is February 23rd. It is also believe that banana bread was a by product of the Great Depression as resourceful housewives did not want to throw away overripe bananas. Some people believe the modern banana bread was developed in corporate kitchens to promote flour and baking soda products. However it came about it is delicious, not too sweet, and yummy for my tummy.


Storing:

Room temperature- Banana nut bread will stay fresh for about four days at room temperature. Make sure you cool the bread completely before sealing in a container. You do not want to trap warmth in the container which can produce moisture.

Refrigerate- There is no need to refrigerate banana bread if it is stored in a cool place with plastic wrap or clingfilm before placing in a container.

Freezer- Banana bread freezes really well. Make sure you completely cool the bread and wrap the bread in plastic wrap so that it is completely covered.

Let's Cook!


Preheat- Preheat the oven to 350° F (175° C) and butter the loaf pan.

Ripen bananas- Ripen bananas are the best for this dish. To ripen bananas in the oven, bake in the oven at 350° F for 30-40 minutes or until blacked and moist. Mash with a potato masher or fork until smooth.




Mix- Stir in the sugar, 2 eggs beaten, and vanilla extract. Lastly, mix in the flour. (Optional: add nuts, raisins, blueberries, or chocolate chips)


Add- the melted butter, baking soda, and salt.



Fold- in the Pecans gently into the batter.



Final Touch- Pour batter into butter loaf pan. Bake for 60-65 minutes in the oven. Insert a toothpick in the center, if it comes out clean your bread is fully baked.
