Pulled Chicken & Roasted Veggie Adobe Sauce

Updated: Apr 8, 2023

Pulled chicken is a great way to change up a recipe. I saw this recipe on Ree Drummond Pioneer Woman, it tempted me to try it because, it is such an easy and quick recipe but, for me it wasn't spicy enough. Ree has some awesome recipes but I decided to kick it up a notch with chipotle peppers. My twins love spicy food so added 2 or 3 chipotle peppers in Adobe sauce gave it the right amount of spice to satisfy the hungry family tastebuds.

Doing the week if you have kids, cooking a meal can get troublesome. This recipe took all of 10 minutes under the broiler to roast the vegetables and chicken. It was less time than that to create the sauce in the food processor. Dinner done in under 20 minutes is a win win in any game.
