What can I say about sweet potato puree? It is silky, smooth, creamy, and full of decadent flavor. Everyone creates their own taste sensation. Sweet potato puree can be slightly sweet or you can take it to the savory side. I must confess I am on the slightly sweet side. Sweet potato puree is so versatile, you can serve it as a side dish, blend it in with a smoothie, or great for baby food as well.
Sweet potato puree is similar to mash sweet potatoes but, the texture is different by adding heavy whipping cream and zapping it in the food processor to give it that luscious creamy smooth texture that is like velvet on your tongue which elevates the taste. Sweet potatoes are nutritious, high in fiber, potassium, and antioxidants. Sweet potatoes are
also rich in beta carotene, which is converted to Vitamin A and is a great support for good vision and your immune system. Sweet potatoes are usually found orange in color but, there are other sweet potatoes found such as white, red, pink, violet, and purple. They can be eaten boiled, baked, fried, pureed, or steamed.
Ingredients Sweet Potato Puree
2 large sweet potato
1/2 cup granulated sugar
1/4 cup brown sugar
1/4 cup heavy cream
1 tsp vanilla extract
1 tsp lemon zest
3 Tbsp butter
Let's Cook!
Clean and peel the sweet potatoes. Cut the sweet potatoes in cubes for even cooking of the sweet potatoes.
Once the potatoes are tender, pour off the water place in a large bowl and mash them.
Using the zest of a lemon and butter add them both to the mashed sweet potatoes.
Combine brown sugar and granulated sugar, blending well.
Once the brown sugar, granulated sugar, and butter, are blended add in vanilla extract and heavy whipping cream.
Transfer all the ingredients to a food processor and whip until silky smooth.
Ready to serve!
